Happy December everyone! I hope you all are having a wonderful holiday season thus far.
I love Christmas SO much- the lights, the music, the decorations, the snow (as long as I'm not driving in it), the parties- all of it is just so magical. One thing I especially enjoy are all the yummy treats I get to eat!
I haven't made any sorts of treats this month yet so today I decided to look on Pinterest for some inspiration and get to bakin', and I'm sharing my recipe with you!
My husband really isn't a fan of sugar cookies (boo) so I had to put my cookie cutters back in the cupboard and search for something else.
I found a TON of super awesome recipes but I unfortunately didn't have all the ingredients to make them, and with it being Sunday, I didn't want to go to the store to buy things. So I had to find a few recipes that contained what I actually DID have (that happens more often than not actually so I usually make things up as I go, whoops haha).
I was lucky enough to stumble upon both a cookie recipe AND a frosting recipe containing all the ingredients I had, and they turned out soooo delicious! Tay and I have already eaten enough to consider them our dinner, and our home teacher came over and ate four!
They were seriously so quick and easy to make, not to mention super tasty. So, my dear reader, if you're looking for a simple, yummy, minty Christmas treat to make this month, look no further:
INGREDIENTS

INGREDIENTS
(cookies)
- 1 box of chocolate cake mix
- 1 egg
- 1/2 butter, softened
- 2 tablespoons of water
- chocolate chips (optional)
(frosting)
- 1 cup butter, softened
- 2 1/2 cups powdered sugar
- 1/2 teaspoon vanilla
- 3-4 drops of peppermint extract (or more depending on how minty you want it)
- 5-6 crushed candy canes
DIRECTIONS
(cookies)
- Preheat oven to 350 degrees F.
- In a large bowl, combine cake mix, softened butter, and egg with mixer or spoon until throughly mixed.
- Add additions if you'd like.
- Drop dough by rounded teaspoonfuls 2 inches apart on ungreased cookie sheet (dough is sticky so I sprayed non-stick cooking spray on my hands before rolling)
- Bake for 9-12 minutes.
- Let cool for 5 minutes.
- Once cookies are cool, add frosting.
(frosting)
- In medium bowl, mix butter with mixer until smooth.
- Gradually add powdered sugar and vanilla.
- Mix until fluffy.
- Add in crushed candy canes (save about 1/2 full to top cookies off)
- Once mixed, add to cookies.
- Eat and be satisfied by their deliciousness.
*instead of putting the chocolate chips in the dough, I melted them and drizzled on top of the frosted cookies, then put the crushed candy canes on top)
I hope you all have the chance to try this recipe out, it's been a big hit in my home the past few hours they've been sitting on my counter and I know they'd be an even bigger hit at a Christmas party.
